​The Soaking Secret: The most important step for Sabudana Khichdi is the soak. Wash the pearls under running water until the water runs clear (this removes excess surface starch). Then, add just enough water to barely cover the pearls. Do not add too much; let it sit for 3–4 hours (or overnight) so the pearls absorb the water and become soft but stay separate.
